If you’re following the Keto diet, there’s one sort-of holiday that can be extra depressing and is none other than Pancake Tuesday. Shrove Tuesday is the last day before Lent where historically, Christians have celebrated with a feast. Nowadays, Shrove Tuesday’s feast is made up of some good ol’ pancakes.

If you’re eating the Keto diet, this is not a meal for you. Or is it? Maybe instead of silently suffering through watching your family members enjoy breakfast for supper, you can make your own version of pancakes that will nourish your body. These pancake recipes are not only good for you but they taste incredible. Heck, your family may even prefer your pancakes over their traditional recipe!

1. Pumpkin Pancakes
Even though pumpkin spice is mainly meant for the Fall season, there’s no reason why you can’t make some pumpkin pancakes for Shrove Tuesday!

While the taste of a freshly cooked pumpkin is hard to replicate, the canned cooked pumpkin works just as well!

2. Zucchini Bread Pancakes

I love when veggies are brought into the mix with recipes that are sweet. It adds a fantastic dimension to the flavor while infusing the food with additional nutrients.

Make these zucchini bread pancakes for your loved ones. If you want to fool them, grate the zucchini finely and add sugar-free chocolate chips.

3. Macro Cakes

Have you ever heard of crepes? They’re paper-thin pancakes that envelope fruit, whipped cream, and syrup into a delicious wrap of perfection.

Instead of crepes though, we’re going to introduce you to macro cakes which are stackable pancakes that are thicker than crepes and thinner than a traditional pancake.

4. Mug Pancake

If you’re a student in school and have limited options for cooking surfaces, you don’t need to miss out on Shrove Tuesday. This mug pancake will hit the spot while maintaining your keto diet.

Instead of adding sugar and syrup, try topping with some berries for a sweet but subtle flavor.

5. Coconut Pancakes

If there’s one flavor I just cannot live without, it’s coconut! If it’s a grey day outside, adding a little coconut oil to my coffee or smoothie can create a subtle tropical taste.

Let’s take this one step further and make some coconut-blueberry pancakes. They are rick in flavor, thick like traditional pancakes and TO DIE FOR.

6. Almond Cream Cheese Pancakes

Much like cheesecake, combining sweet with savory is a great way to take your cooking from traditional to gourmet seamlessly.

9. Savory Cheese Pancake

Another direction you can take your Shrove Tuesday is to forget sweet altogether and go for a savory pancake topped with good fats!

Add an egg, some avocado and turkey bacon for a scrumptious meal that absolutely won’t dissapoint your crew of hungry family members and friends.

10. Spinach and Feta Pancakes

For the foodies in the crowd, these pancakes are for you! Chop up spinach and sprinkle feta cheese into your pancakes for a savory blend of flavors.

You can also top it off with a savory butter such as chive butter or even herb and garlic cream cheese. Delicious!

11. Squash Kefir Pancakes

We’ve seen squash in many forms in the food world because of how versatile it is. Heck, you’ve probably had squash in the form of pasta!

This time, we’re adding some creamy kefir into the mix to make a super savory pancake that won’t dissapoint any brunch crowd.

If you have some friends that are skipping out on the animal products and are following the keto diet, it can be slim pickings when it comes to recipes.
