If there’s one thing that people love to photograph across the board, it’s their food! Whether it’s beautiful or disgusting, food has become a fun way for people to express themselves and their literal taste. In 2017, some pretty insane food trends broke into the foodie scene in a fun and fabulous way. The main focus was taking foods out of their normal context and placing them in another color, form or flavor. Here are just a few fantastical food trends that dominated our year.

1. Black Ice Cream

In running with the “all black everything” clothing trend, black ice cream became a huge focus for fashion bloggers and foodies alike.

Black ice cream is made with activated charcoal and is said to have a mild vanilla flavor with a hint of coconut if the ice parlor adds it in. It turns your teeth, lips, and fingers black because of the charcoal, but it seems to be worth it because everyone is eating it.

2. Cauliflower Pizza

Pizza is a common family favorite across the board and even over many decades. Who can resist the gooey cheese and delicious toppings? With things being so health conscious these days, pizza has become some peoples’ downfall to maintaining a healthy diet.

Enter cauliflower pizza crust. The low carb, guilt-free thin pizza crust that swoops in and saves the day for someone who is eating healthy but has a serious junk food craving. We think this trend will definitely continue into 2018.

3. Unicorn E-V-E-R-Y-T-H-I-N-G

Unicorns used to only exist in fairy tales, but it seems in 2017 bakers and cooks alike were doing everything in their power to make unicorns become a true reality.

Whether it was the Starbucks’ Unicorn Frappucino that started trending online or the fun, homemade unicorn cakes made for birthday parties, people have been doing everything in their power to achieve those amazing unicorn colors in their food.

4. Edible Insects

With the environment being in less than great shape, people have been looking for different ways to conserve our planet. We only have one earth you know!

It turns out that one way to be environmentally conscious is to get protein from insects instead of meat. They reproduce at mind-blowing rates and have tons of nutritional benefits. In 2017, people took this year as an opportunity to showcase their daring palate with meals centered around the protein of the future.

5. Turmeric Powder

When January 2017 was rung in as the new year, people wanted a new body. They used a spice called turmeric and found that it had incredible cleansing properties and was an overall fantastic spice for your body.

Turmeric lattes, smoothies, and soups were then created with turmeric as the star of the show and it worked. This spice appealed to foodies, health nuts and health hopefuls alike making it a super trendy health food.

6. Glossy Icing

Just when cakes couldn’t get prettier – they suddenly did! A post-modern approach to baking has become a trend in 2017 that doesn’t seem to be slowing down.

The glossy icing is so glossy you can actually see your reflection in it! It makes the cakes seem larger than life, practically from outer space. It actually is not hard to make but is best enjoyed when a professional does it.

7. Rainbow Bagels

Bagels are a food that will never go out of style thanks to their versatility and multiple flavors. Things may have gotten a little boring for a second, but it only took bakers a short time to figure out what would make their businesses wildly successful.

The rainbow bagel is a sought-after food because of how picture ready it looks. Upload a photograph of this treat to your Instagram feed and you’ll be getting asked over and over where you got it. We think that this is just the beginning of more colorful and fabulous bagels to come in 2018.

8. Limited-Time Starbucks Frappucinos

Starbucks, one of the most successful coffee shops in North America quickly caught on to the food trends of 2017 and threw together some absolutely genius looking frappucinos that would have all the social media enthusiasts going crazy.

These frapps may have tasted a little sour or over the top sweet, but people didn’t care because it just looked so darn Instagram worthy! With the Zombie Frapp and Unicorn Frapp breaking into the food scene in 2017, we are so excited to see what Starbucks has to offer in 2018.

9. Mermaid Toast

Just when we thought color had been used in just about every single way possible, the mermaid trend exploded. Specifically mermaid toast. It was started by a blogger who used healthy food coloring such as green matcha powder do create a meal only mermaids could dream of eating.

The main idea is that you are coloring your cream cheese with natural and healthy food dyes and powders. Unfortunately, the cost of these products was extremely high and the colors weren’t as bright as everyone had hoped. Instead, most people started using regular food coloring to successfully create a breakfast to feed their Instagram followers.

10. Clear Popsicles

Using bright colors doesn’t always have to involve food coloring! When minimalist foodies meet bright fruits, beautiful things happen.

In the summer of 2017, people were staying cool with these beautiful fruit pops that were even featured at weddings because they looked so classy. Chop up your favorite fruit and add some naturally flavored water or soda for the perfect treat on a hot day.

11. Crazy Burritos

In 2017, we learned that burritos didn’t just have to be filled with Mexican food, you can burrito just about anything! With food trends being such a huge deal these days, one thing everyone just had to know was, if you could burrito sushi!

As it turns out, burrito-ing sushi is possible and actually tastes amazing. We think this trend will continue as long as sushi and burritos are in demand.

12. Edible Cookie Dough

Who snuck little dollops of cookie dough when we were little and our parents were baking? Just about everyone. Well, now all those little kids are grown up and they still want to eat cookie dough raw.

In 2017, bakers mastered the most delicious and safe cookie dough possible and some are even starting up cookie dough shops! Instead of getting ice cream, you get cones of cookie dough. It’s not very nutritious but it’s definitely delicious.

13. Buddha Bowl

People are always looking for ways to eat healthily and actually enjoy the taste of their meals as well. This is where Buddha bowls were born. If you’re looking for one meal that will infuse your body with as many nutrients as possible, consider a Buddha bowl.

They are made with leafy greens or a whole grain as a base, and then are topped with tons of veggies and a light dressing. Some even come with grilled chicken and a specialty cheese such as feta or goat cheese.

14. Food Fusions

The general logic for 2017 is as follows: if there are two foods that are amazing on their own, then if you put them together, they will be amazing.

Some examples of this can include a spaghetti taco, tandoori chicken pizza or even the sushi burrito! No matter what you combine together, the goal is to shock foodies in a good way by combining to amazing flavors together to make fireworks of flavor.

15.  Vegan Food

Similarly to the insect craze, people are looking for ways to make their diets more eco-friendly and that includes saving animals. If you tried out a vegan diet this year, you have been part of a huge food trend of 2017.

People claim to feel better and less bloated with this way of life, and they are learning to care more about their surroundings as well. Veganism also forces cooks to be more creative than normal to come up with some delicious, animal product free meals.

16. Sea Vegetables

Vegetables are always in style, but pulling up fresh produce from the deep was definitely a trend in 2017. This trend accompanied the ongoing love of sushi perfectly and made it fairly easy to market as well.

Cooking them with asian dishes or serving them raw are two ways people have been enjoying this new food trend.

17. Shirataki Noodles

This is it. The miracle the health world has been waiting for. A way to enjoy pasta without reaping the negative side effects of a high carb meal.

Shirataki noodles are made from a plant in Asia called the Konjak plant. These noodles burst onto the foodie scene in 2017 due to the fact that they are mostly made up of water and have no calories or carbs.

18. Pickles

We have always loved pickles, but maybe we haven’t expressed our love for them as much as we have in 2017. Whether they are big dill pickles or small gherkins, we are crazy for pickles.

The best part about pickles is that they can easily be home made and enjoyed during any season of the year. From pickle tuna boats to deep fried pickles, people were posting their love for pickles a lot this year.

19. Coffee In A Cone

Coffee in a cone was one of those trends that maybe won’t have longevity but definitely looks fantastic. The coffee tastes amazing and gives you that much needed morning caffeine kick while also satisfying your chocolate craving.

Coffee is poured into a chocolate coated ice cream cone to be enjoyed, but the only problem is that sometimes it leaks out the bottom of the cone.

20. Insta-Worthy Staged Foods

The beauty and esthetics of your social media feed have become increasingly important as people have chosen to make their social media presence more of a business endeavor.

This is why having insanely delicious-looking, incredible food is now the most sought after foods on the menu. People love photographing their food!
