This is the part where I bashfully admit that this recipe came after a craving for cookie dough, and dietary restrictions don’t allow me such basic joys in life. So late one evening, I whipped up a vegan & gluten-free raw cookie dough, formed into 3 little balls and called it dessert (aka: emotional wellness bites). I let the kids try them, they were none the wiser, and so I thought – you know…this outta be shared with the world. So here we are. Sharing is caring. Your next emotional roller coaster will be well complimented by some little bites of heaven.

Servings: 1
Prep Time: 2 minutes

Ingredients

  • 1 tbsp coconut oil (solid)
  • 1 tbsp maple syrup
  • 3 tbsp gluten free flour (any flour will do)
  • 1/4 tsp vanilla
  • pinch of salt
  • 1 tbsp dark chocolate chips (be sure they are dairy free)

Equipment

  • Small ramekin
  • Fork for mixing

Method

  • Starting with the coconut oil, add all of your ingredients except the chocolate chips in a small ramekin, mix with a fork.
  • Once blended, add your chocolate chips, and take a small handful (approximately a tablespoon worth) of dough and form into a ball shapes, you should be able to make three total, or one large one (you do you!).
