While summer brings out that desire to get marinading and grilling up a storm, these recipes for marinades will last you all year long! Whether you grill, bake or even pan fry…these marinades will stand up to your cooking methods and your taste buds.

If you’re like me, you often are looking for ways to meal prep and save money. That often comes with buying things in bulk. Including “family pack” sizes of chicken breast! These often have 8-10 breasts in each, and this is a great opportunity to take those and divide them into multiple meal options. No, this doesn’t mean you have to eat chicken breasts 4 times this week, because once you’ve prepared your marinades, you can FREEZE them too!

With doing 4 different chicken marinades, we decided to go in 4 completely different directions so that should you decide to have them all in one week, you will absolutely NOT get bored. Each one completes a different meal.

1. Soy Honey Garlic Chicken

This one the flavor marinaded so perfectly into the chicken that you could really taste all the elements that went into it. With ingredients like soy sauce, garlic & honey we paired it with a brown rice since it held so much flavor itself, we didn’t want too overpowering a side. However, this would go quite amazing with some Asian noodles, or some Chinese broccoli.

Servings: 2

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp soy sauce (use tamari for gluten free)
  • 2 tbsp honey
  • 1 tbsp garlic, minced
  • 2 tbsp water

Equipment

  • Large freezer bags

Method

  • Combine all the ingredients in to a large zipper top freezer bag, seal and mix.
  • Marinade in the fridge for 2 hours up to a day before cooking. Or, freeze immediately for use on another day.
  • Grill or bake until fully cooked. Let rest for 5-10 minutes before serving.

2. Sweet & Spicy Italian BBQ Chicken

We loved this one paired with a pasta & marinara. It’s delicious and has those classic Italian flavors you know you and love.

Servings: 2

Ingredients

  • 2 boneless skinless chicken breasts
  • 1/4 cup bbq sauce
  • 1/4 cup Italian salad dressing
  • 1 tsp chili powder
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp marinara sauce

Equipment

  • Large freezer bag

Method

  • Place all ingredients in a large zipper top freezer bag, and mix well.
  • Marinade for minimum of 2 hours up to a full day. Or, freeze immediately for later use.
  • Grill or bake until fully cooked, let rest for 5-10 minutes before serving.

3. Chipotle Lime Chicken

This one we paired with a slaw, because it’s light and refreshing and while it would also go well with a rice or Mexican side, we wanted to keep it light.

Servings: 2

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chipotle chili powder
  • 1/4 tsp paprika
  • 1 tsp brown sugar
  • 1 tbsp garlic, minced
  • 1/2 lime, juiced
  • 1/8 tsp salt

Equipment

  • Large freezer bag

Method

  • Place all your ingredients into a large zipper top freezer bag, seal and mix well.
  • Let marinade for 2 hours up to a day. Or, freeze immediately for later use.
  • Grill or bake until fully cooked. Let rest for 5-10 minutes before serving.

4. Curry Yogurt Chicken

For that Indian flavor-infused chicken, this one hit the spot. Really simple ingredients, and the color was absolutely beautiful from the curry powders. Paired with a simple basmati rice, this is a healthy way to enjoy a curry without it being smothered in creamy sauce.

Servings: 2

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tbsp plain yogurt (not sweetened)
  • 1 tsp lime juice
  • 1/8 tsp salt
  • 1 tsp curry powder
  • 1/2 tsp brown sugar

Equipment

  • Large Freezer Bag

Method

  • Combine all the ingredients in a large zipper top freezer bag, seal and mix well.
  • Marinade for 2 hours up to a fully day. Or, freeze immediately for later use.
  • Grill or bake until fully cooked. Let rest for 5-10 mins before serving.
