When I’m asked what my favorite meal is, I’m always debating between breakfast, lunch, and dinner. However, the truth is that none of these mealtimes is the correct answer. Brunch is quite easily my favorite meal of any day of the week. You can mix savory with sweet and even enjoy a mimosa before noon!

 1. Homemade Yogurt

Yogurt is an oldie but a goodie. It can be served in so many forms, but it is always best served FRESH. Fresh from the Instant Pot!

Once your yogurt is prepared, top it with homemade granola and fresh berries. A sprinkle of cinnamon is the little secret to taking your yogurt from good to fantastic!

2. Cinnamon French Toast Casserole

Ya, french toast is pretty good, but have you ever had a french toast casserole? It really is a game-changer. Imagine cinnamon buns, french toast and your favorite elements of cake all wrapped up into one delicious meal.

Not only are you having french toast, but it’s topped off with creamy icing and some nuts for extra flavor. Delicious.

3. Lemon Blueberry Breakfast Cake

If you’re a fan of scones, you will thoroughly enjoy this breakfast cake. The tangy notes of lemon contrast well with the sweet blueberry flavor.

Without being too sugary, the glaze icing on top gives this cake the sweetness of dessert while still tasting like a breakfast treat.

You’d be lying if you said that you’re never in a hurry. I mean, who isn’t these days? We really do need to learn to slow down and take our time.

Poached Eggs are a classic brunch dish and there isn’t really a way they can be served that will not be delicious. The Instant Pot helps all your poached dreams come to life in just minutes!

Add your egg onto an English muffin with avocado and bacon, and don’t forget to make some homemade hollandaise sauce!

6. The Absolute Best Instant Pot Frittata

If you’re keeping things healthy these days, the french toast bake may not be the recipe for you! However, a frittata is a great option.

Frittatas are my personal brunch meal of choice because they are low carb and high protein while tasting absolutely scrumptious!

7. Blueberry French Toast Bake

Why only have one french toast bake recipe when you can have two?! This recipe is not only tasty, but it is beautiful!

That’s right, pour piles of berries into this recipe and upload a picture perfect food selfie to your Instagram feed, because this meal doesn’t need a filter!

8. Steel Cut Oats

Steel cut oats are fantastic for your digestive health and loaded with energy that will help you get through your day without having the 2 pm crash.

To dress this up for brunch, serve a platter of nuts and fresh fruit to top it off. If you want to make it really creamy, serve with full-fat coconut milk.

Another variation of a frittata but this time, it’s a casserole! Instead of waiting and waiting for your incredibly wet egg casserole to bake in the oven, use this Instant Pot recipe for a quick, gourmet brunch option.

Casseroles can be unhealthy, but if you load them up with delicious veggies, they will quickly become one of your main sources of produce!
