As we approach summer, there are so many more fun things to do on the weekend! I feel like my schedule is getting so busy and we don’t have time to prep our meals in the way we would like to. At the beginning of the week, I just wish I could make one big salad to last me the week. Well, after much research, I’ve come up with a solution to not only my food struggles, but yours as well. These salads will last more than one day and are awesome to bring to any upcoming BBQ’s!


1. Best Southwest Couscous Salad

Fill up on this southwestern take on a Buddha bowl. I personally feel like the secret to a good health bowl is black beans and corn, their textures are the perfect addition to a healthy mix like this!


2. Easy Greek Pasta Salad

An easy salad like this can be made in big batches that will stay fresh throughout the week! It’s also a cost effective salad to make for a large group of people at a BBQ or potluck.


3.  Marinated Vegetable Salad

Avoid any chance of soggy greens with this marinated veggie salad that will get you a whole pile of servings of vegetables for your day. Add some feta or chicken for a full protein packed meal.


4. Chickpea Quinoa Salad with Orange Soy and Sesame Dressing

Any vegans in the house?! There always is, and they will love this amazing salad that is so filling and flavorful. Packed with fresh ingredients, it will be difficult to be disappointed with this recipe!


5. Dill Pickle Pasta Salad

Lately, we’ve noticed that everyone has been craving those salty Dills. So here’s another excuse to make a dish surrounding those crunchy snacks! It’s an awesome cheat day salad to go with a juicy hamburger.


6. Spring Pea Salad

This is a work of ART! Got a special guest to impress? Make this salad that is packed with nutrients (add the greens last minute) and edible flowers. This salad will also appeal to cheese lovers and avocado lovers alike.

7. Mexican Roasted Cauliflower and Chickpea Salad

Cauliflower is a hot veggie in the health world right now! It can acquire the flavor of any spice you add to it. That’s why it’s perfect for a Mexican roasted salad!

8. Quinoa and Kale Protein Power Salad

This salad is not only pretty, springy and fun, but it’s super healthy and will last for days. Kale is a great green to use in salads that will last a few days because it’s more resistant to wilting than, say, spinach or baby romaine.

9. Potato Salad with Green Beans and Asparagus

Potato Salad can often be packed with mayonnaise and salt. Opt for a healthier option with this summer salad that will be a perfect side to a BBQ’d steak.

10. Watermelon Radish Citrus Salad

Look at that color! Combine sweet and savoury with this salad that will take your family off guard and have everyone trying even just a little bit because it looks too cool to not eat.

11. Mango Quinoa Salad

I am all about that mango salad life! I find it adds a perfect sweet addition to a regular salad and it takes your tastebuds on a tropical vacation. If you want to take it to the next level, roast some of your favourite veggies to create a vibrant veggie flavor. YUM!


12.  Melon and Pineapple Fruit Salad with Honey Lime and Mint Dressing

This recipe won me over the moment I saw “Honey Lime and Mint Dressing”. How delicious does that sound? My goodness. I can’t wait to whip this recipe up this summer.

13. Roasted Sweet Potato Quinoa Black Bean Salad

This classic health bowl or salad is perfect to take to work for lunch each day, and even the kids love it! Try sending it to school with the little ones while you enjoy some for yourself too. I personally would add some Chia Seeds and Goat Cheese to this bowl of goodness.

14. Seriously Delicious Detox Salad

After a salt and sugar packed weekend, we just need to go easy on our body. Kick off the week right with a detox salad that won’t make you feel deprived of all the things you love.

15. Kale Superfood Salad with Quinoa and Blueberries

Doesn’t this look amazing?! Yet another salad that features so many of my favourite foods and won’t wilt after the first day that you make it. Enjoy!
