Saint Patrick’s Day is right around the corner. And if you’re tired of hugging shamrocks in hopes of a little springtime in the air, try a few of our greenest recipes on for a little Irish in your kitchen…

1. Green Goat Cheese Balls

Just a little nibble of green will do ya! And these creamy, tangy little appetizers do the trick. Just roll 1-inch cubes of goat cheese into yummy little balls and dip in a coating of green minced shallots and dry herbs. Add salt, pepper, paprika, and cumin to taste.

2.  Leprechaun Hat Cookies

For a touch of Irish luck you could chase down a leprechaun or you could just whip up a sweet batch of these green cookies. I just add some green food coloring to my favorite cookie dough to infuse in some of that happy-go-lucky color to your cookies, add black icing, a gold chocolate coin, and stack a green mini peanut butter cup on top!

3. Shamrock Pancakes

Ensure you’re leaving the house with a lucky foot forward this month, thanks to these delightfully green shamrock pancakes. I simply mix a half dozen or so green drops of food coloring into my pancake batter and use a shamrock cookie cutter to finalize my lucky breakfast.

4. Green Mac N’ Cheese

Green and nutritionally delicious, this mac n’ cheese recipe is a sneaky way to incorporate spinach into your child’s meal without them even noticing. I puree baby spinach ahead of time in my food processor and then just mix it into hot, drained pasta, add the cheese sauce—and voila—holiday fun for the kids and nutritional points for mom!

5. Green Velvet Cake

Earn a kiss from your little leprechauns when you present this moist and flavorful green velvet cake at dinner. Turn your batter from red velvet to green with a food coloring swap, and decorate with thick vanilla frosting and crushed pistachio nuts.

6. Spinach Cups

These green spinach cups are super festive and fun to eat because you can just pop them into your mouth and wash them down with a nice Guinness.  I use store bought tortilla and fill each cup with a mix of frozen spinach, ricotta cheese, and spices.

7. Giant Jalapeno Poppers

Your guests will think they’ve struck gold in the jalapeno popper lottery when they’re served these massive appetizer treats on St. Patrick’s Day. You can source larger jalapenos at your grocery store, fill them with a mixture of spices and cheese, and bake them up golden brown in the oven.

8. Green Flash Cocktail

Why settle for the same old, boring green beer when you can prepare a punch bowl of pure gold—well, green! These tart cocktails consist of sherbet, limeade, and granulated sugar blended with vodka, soda, and ice.
