Come summer, one doesn’t want to be weighed down by heavy carbohydrates for lunch or even dinner. That’s why these sizzling and delicious summer-inspired soups are the perfect light dinner appetizer or lunch entrée.

Here are eight summer soups jam-packed with ingredients straight from the garden…

1. Garden Gazpacho

This Garden Gazpacho soup is the ideal warm weather lunch! It’s packed with the goodness of fresh veggies—such as tomato, onion, bell pepper, and cucumber. Plus, you don’t even have to turn on the stove to prepare a hearty pot of this refreshingly chilled yet satisfying broth-based treat.

2. Chicken Tortilla Soup

Turn up the summer heat like they do in the south—with this Mexican-inspired chicken tortilla soup. Spicy and flavorful, this soup is quite easy to make using fresh garden ingredients like corn, bell pepper, fresh garlic, and fiery jalapenos.  Plus, you can take the spice up a notch or dull it down to your taste preferences.

3. Baked Potato Soup

What better to cap off the perfect summer burger than a hearty bowl of baked potato soup? Not to mention the fact that you can load it up just like a baked potato, by adding garnishes such as bacon bits, shredded cheese, sour cream, salsa, and fresh chives straight from your local farmer’s market.

4. Meatball and Vegetable Soup

Summer is the ideal time to ignore the oven in favor of the grill and, of course, the slow cooker. So pop some frozen meat balls in your crock pot and set them on low to simmer in this super easy soup base all day long. Low and behold, right after school and work, you’ll have dinner ready!

5. Corn Chowder with Potatoes and Ham

A sweet corn chowder such as this one is ideal for a satisfying summer luncheon. It’s no fuss and no sweat to prepare, particularly when paired with fresh summer salads and fresh crusty, rolls right out of the oven. And, you can serve it up chilled for a refreshing summer picnic.

6. Miso Soup

Sure, Miso is a traditional Japanese soup that’s not typically associated with summer. However, it’s an ideal warmer weather broth, as it’s light, fragrant, and super easy to prepare on the fly. When you consider that the base is made with soy beans and a little added shitake mushroom and green onion, it makes the ideal healthy summer potage.

7. Roasted Cauliflower and Leek Soup

Eating healthy this summer (just in time for bikini season) just got a lot easier thanks to this delectably light and wholesome roasted cauliflower and leek soup. Kick off a pot luck or picnic by serving up satisfying bowls that show off the flavors of the summer garden…leaks and cauliflower, oh my!

8. Chicken and Sweet Corn Soup

Chicken is nice enough, but when married with the sweet, succulent flavors of summer corn, you just can’t do a barbecue wrong! You can prepare your homemade chicken stock using a crock pot so you don’t even have to go near the stove—or make it quickly using stock chicken soup cubes. Regardless, it will be gobbled up on sight!
