As we approach summer, there are so many more fun things to do on the weekend! I feel like my schedule is getting so busy and we don’t have time to prep our meals in the way we would like to. At the beginning of the week, I just wish I could make one big salad to last me the week. Well, after much research, I’ve come up with a solution to not only my food struggles, but yours as well. These salads will last more than one day and are awesome to bring to any upcoming BBQ’s!

1. Best Southwest Couscous Salad

Fill up on this southwestern take on a Buddha bowl. I personally feel like the secret to a good health bowl is black beans and corn, their textures are the perfect addition to a healthy mix like this!

3.  Marinated Vegetable Salad

Avoid any chance of soggy greens with this marinated veggie salad that will get you a whole pile of servings of vegetables for your day. Add some feta or chicken for a full protein packed meal.
