National Coffee Day…no I didn’t make up a new holiday. It does exist, and it will be celebrated this year by sipping quality brews on Monday, September 29, 2014.

No boring old brew will do! Try sipping and savoring these eight fancy brews for National Coffee Day…

1. Gingerbread Coffee

Mingling together fragrant spices of allspice, cinnamon, nutmeg, ground ginger, and molasses together in one cup will bring to mind visions of gingerbread houses dancing in your coffee cup. This brew is the perfect comfort cup for a chilly fall evening, wrapped in a blanket by the fire.

2. Cappuccino with Heart Foam

Imagine treating your sweetie to a morning cup of cappuccino—customized with tiny hearts traced in frothed milk. It’s easier than it looks; simply pan-steam your milk on the stove-top, whisking briskly until foamy and thick. Pour steaming milk portions into individual coffee cups using a spoon to hold back foam. Top with small dots of foam and swirl a toothpick through each dot to create the trialing heart shapes. See, you can wear your heart on your coffee!

3. Dulce de Leche

This rich and dark Hispanic-inspired brew is a bold mixture of strong-brewed good coffee, grated chocolate, heavy cream, sweetened condensed milk, and lots of sugar. You can track down dulce de leche ground beans at gourmet supermarkets or Hispanic specialty shops. The trick to making this brew is to keep it steaming hot and to top with a heaping puff of whipped cream and grated chocolate shavings.

4. Easy Peppermint Mocha

If you’re like me, it doesn’t have to be ringing silver bells and snowing outside to enjoy the taste of chocolate, coffee, and peppermint! Trust me when I say that his tasty Peppermint Mocha will warm you—from nose to toes—on a chilly autumn evening.  Plus, you can use half-caf or decaf for a quick nightcap that won’t keep you up all night.

5. Spicy Pumpkin Latte

Pumpkin fills the senses as soon as the fall chill hits the air. This particular spicy pumpkin lattes recipe is a skinny take on a seasonal favorite. You can still get your pumpkin brew on using low-fat soy milk, natural agave syrup, pumpkin spice, and your favorite coffee brew.

6. Walnut Coffee Frappe

This nutty-sweet cup starts with your favorite instant coffee brew. Blend walnut halves to a fine powder in your blender or food processor.  Stir hot coffee and the milk of your choice (I opt for almond for an extra nutty flavor). Sprinkle in chocolate chips, vanilla ice cream, vanilla extract, and honey and pulse until you’re left with a creamy and smooth walnut coffee frappe shake. YUM! SLURP!

7. Irish Coffee

You can enjoy a wee nip of the strong stuff in your afternoon brew without a trip all the way to the Emerald Isle. This rich and decadent Irish coffee calls for hot black coffee brewed strong, a gracious snort of your chosen Irish whiskey, and heavy cream and sugar to suit your lucky taste buds.

8. Honey Coffee

For a pleasant pick-me-up with just the perfect amount of sweetness, sip a cup of honey coffee, inspired by a traditional Spanish-style latte. All of the ingredients are steamed in the same stove-top saucepan— coffee, honey, nutmeg, milk, and cinnamon. Heat until boiling lightly and stir in a dash of vanilla at the end.
